The Ro-Tel brand tomatoes (with peppers) and fresh cilantro are the key to your success. Properly ripened avocados are a must. Anyone can make average “guac” but select ingredients* will set yours apart from the crowd.
Avocado – your preferred variety. Most produce sections stock rock-hard fruit to improve shelf life. Buy a few days in advance.
*Canned Ro-Tel Tomatoes – spicy hot (with habanero peppers). Get chopped Roma if Ro-Tel not available in your market.
Sweet White Onion – freshly chopped
*Fresh Cilantro – finely chopped; must be fresh (not dried herbs). Very strong herb – add slowly
Lime Juice – squeeze from fresh whole limes (not concentrate)
Mayonnaise (or Miracle Whip) – just a little; this is optional but will make it creamier
Garlic – freshly minced; add slowly to taste
Salt and Ground Black Pepper – add slowly to taste
Place avocado, drained tomatoes and a tablespoon of mayo in large mixing bowl. Mix ingredients with a potato masher. When still large chunks add onion, cilantro, garlic, lime juice, salt and pepper. Continue mashing as you adjust spices to taste. These are all strong flavors so it’s easy to over do it. Stop mashing while it’s still chunky or you’ll have soup! Cool in refrigerator for one hour. Mix with large spoon before serving. Garnish with tortilla chips.
